We are
very picky about macaroni and cheese.
Our favorite is Kraft. You just can't beat the taste...and don't try to convince me/us.
We've tried them all. I tried and disregarded many many recipes because they just weren't up to our standards.
Not that we have high standards if our favorite comes out of a box.
But I want a homemade recipe that I can use when there is no Kraft in the cupboard.
So I went online to find a copycat recipe for Kraft. And made it last night.
It got 3* out of 4. Meaning 3 of us liked it, 1 didn't.
I felt it needed more cheese so I added that to the Cheez Whiz amount.
KRAFT MACARONI & CHEESE COPYCAT
8 cups water
2 cups uncooked elbow macaroni
1/3 cup shredded cheddar cheese
1/2-2/3 cup Cheez Whiz
2 Tbsp whole milk
1/4-1/2 tsp salt
Bring water to a boil, add macaroni and cook until done; drain.
Prepare sauce by combining cheeses and milk in a small saucepan over med/low heat.
Stir often as it heats so it doesn't burn. Add salt.
Drain macaroni and combine with sauce.
BUT, there is also another recipe that I like and have used but I thought it was too cheesy/rich. But I still keep it in my stash. It's a good one for anyone who likes Velveeta. I cut the cheese in half. This one also got 3* out of 4.
VELVEETA ULTIMATE MACARONI & CHEESE
2 cups elbow macaroni, uncooked
3/4 lb. (12 oz.) VELVEETA®, cut into 1/2-inch cubes
1/8 tsp. pepper
Cook macaroni in large saucepan as directed on package; drain well. Return to pan.
Stir in remaining ingredients; cook on low heat until VELVEETA is completely melted and mixture is well blended, stirring frequently.
