what's in a cookie???

I'm off to bake Chocolate Chips cookies

...again!..



I buy chocolate chips by the pounds full at Sams/Costco along with flour, sugar, brown sugar, butter and eggs.

I bet I make these cookies every other week.
Wow!  You say.
Yeah, I know.

I have two guys here who love Chocolate Chip Cookies.
And one of them eats 4 at a time.
I'll let you guess which one.


We don't do dessert after meals so if they want something it's cookies.
And often after school/work snack is cookies.
And sometimes it's a "I'm in the kitchen so I'll grab a cookie"
So one batch doesn't last long.

Right now I just use the recipe of the back of the chocolate chip bag but I might have to find a recipe that makes a huge batch.

Good thing they are easy to make!

Garlic Bubble Bread



  • 1 loaf frozen bread dough, thawed
  • 1/2 - 3/4 cup butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic salt
  • 1 tsp parsley
 
  1. Preheat oven to 350 degrees F.  Lightly grease a round spring form pan.
  2. Cut off pieces of thawed bread dough and form into balls.  Combine butter, cheese, garlic salt and parsley. Dip dough balls into mixture and single layer in the prepared pan. Cover and let rise until doubled in size, about 45 minutes.
  3. Bake in preheated oven until golden brown, about 35 minutes.


**a HUGE hit with the family!!!

Pioneer Woman

I love Pioneer Woman's first cookbook.  She included lots of pictures with the recipes, which I love, plus she makes normal foods that an average family would eat.  And she also includes pictures and info about her family and their life.

So imagine my surprise and excitement when she came out with a second cookbook!!


Thank goodness my birthday is coming up soon...I can add this to my birthday list.  :)

Mini Cinnamon Rolls


these are so yummy that you'll want to double or triple this recipe!

  • 1-8oz tube crescent roll dough
  • 2 Tablespoons butter
  • cinnamon
  • brown sugar

For the maple icing:
  • 1 teaspoon maple syrup
  • 1 Tablespoon skim milk
  • 3/4 cup powdered sugar


Directions:
1. Preheat oven according to crescent roll dough package directions. Layout half the dough (4 triangles) and pinch all the seams together. Flip over and pinch the seams on the back side together too.

2. Using a rolling pin, smooth the seams and roll the dough into a square about 1/4″ thick. Brush with half the butter, and sprinkle with as much cinnamon and brown sugar as you want. Roll into a log and cut into 8 pieces.

3. Place mini cinnamon rolls into a non-stick sprayed mini muffin tin. Repeat steps 1 and 2 with the other half of the crescent roll dough. Bake according to package directions.

4. Meanwhile whisk together maple syrup and milk in a bowl. Add in powdered sugar until desired consistency is reached. Drizzle over warm cinnamon rolls.

**If you want these to be a little bigger, only cut them into 4 pieces and place in a regular muffin tin.

Pepperoni Pizza Quesadillas

Pepperoni Pizza Quesadillas
Serves 4
  • 8 flour tortillas
  • 8 ounces of shredded mozzarella cheese
  • 1/3 lb pepperoni
  • 1 16-ounce jar of pizza sauce
  • Optional: 1 6-ounce can of sliced black olives, 1 cup of sliced cremini mushrooms
  1. Brush each tortilla with a thin layer of pizza sauce (so thin that if you turned it over, none would drip).
  2. Sprinkle cheese on top of the sauce on the bottom tortilla. Top with pepperoni and other toppings, if desired. Sprinkle with another layer of cheese and place the other tortilla on top (sauce side in).
  3. Pre-heat a medium cast-iron skilled over medium heat.
  4. Lay quesadilla in the pan and cook for 3-5 minutes on each side, until cheese is melted and tortillas are crispy.
  5. Slice into quarters and serve with a little bowl of pizza dipping sauce.
** Next time I think I would keep the sauce out of the quesadilla. It seemed to make it a bit soft inside.

you picking?

I see from FB and others blogs that people are out getting strawberries.
I'm not doing the strawberry picking thing this year....unless the kids want to do it.

I'm more into raspberries. Plus there's a place just down the road that sells them. I love Raspberry Freezer Jam!

Actually, last year, I bought them at Sam's Club and they were cheaper there than what it cost to pick them. We do eat them fresh and put them in foods but we're not really big fans of Strawberry Jam.

If I do pick with the kids, I'll probably freeze most of the berries for smoothies. What kid doesn't like smoothies?? Oh yeah, Nolan doesn't.

Cookies-n-Cream Milk Shakes

  • 3 Oreos
  • 2 cups vanilla ice cream, slightly softened
  • 1/4 cup milk
  • Crush cookies in ziplock bag.
  • In blender, combine ice cream and milk. Blend until smooth.
  • Add crushed Oreos and pulse a few times.
  • Can add whipped cream or chocolate syrup.
